Shikisakura Daiginjo Manyohiziri
The Shikisakura Daiginjo Manyohiziri has an elegant, light, and clean profile with subtle floral aromas and hints of melon, mint, and tropical fruit. On the palate, this sake is clean, mellow and well-rounded. Gentle flavours of fruit, hints of vanilla, mineral undertones and a gentle acidity, all offer a complex and refreshing profile. The key to pairing the Shikisakura Daiginjo Manyohiziri is to match its light-to-medium body and clean, refreshing finish with dishes that won't overpower its delicate characteristics. For this sake, we believe a white wine glass works well as its shape concentrates the delicate aromas towards the nose. A tall, narrow guinomi can achieve a similar effect, allowing the elegant fragrance to be fully appreciated.
This sake won the Platinum award for the Elegant / Clean category, as well as ‘Recommended Food Matching’ awards for both the Cooked Prawns and Grilled Salmon categories at the 2024 Australian Sake Awards.
Shikisakura Shimotsuke Toji Imai Shouhei Muroka Genshu Junmai Daiginjo
The Shikisakura Shimotsuke Toji Imai Shouhei Muroka Genshu Junmai Daiginjo has a rich and full-bodied flavour profile and is an undiluted (genshu) and non-carbon filtered (muroka) sake. On the nose, it offers gentle fruity and floral notes, specifically ripe banana and tropical aromas that are present but not overly assertive. The palate is characterised by an initial sweetness, followed by a pleasant umami with structured acidity and a dry finish. The mouthfeel is smooth and this wonderfully balanced sake offers complexity without being overwhelming. This sake is great for pairing with a variety of dishes. The undiluted nature of this sake offers enough body to stand up to rich, fatty fish like tuna and salmon and the acidity helps cut through the rich sauces that include cream, butter or olive oil.

Pairing recommendations include beef or tuna tartare, baked salmon with butter and herb sauce, pork or chicken terrine, pesto or creamy pasta, and grilled pork. This sake also works well with all the components of a charcuterie board or a cheese board ~ a great way to share sake, stories and flavours with friends!. A wine glass is perfectly fine to enjoy this sake, however, we also find that due to the slightly higher alcohol content, a wide-mouthed guinomi or a coupe style glass also work well, enabling you to experience its robust flavour profile.
Shikisakura Junmai Ginjo ARUSHIROI
The Shikisakura Junmai Ginjo ARUSHIROI has a complex and robust profile, with a broad aroma profile that includes of white flowers, vanilla, cooked rice, and stonefruit. On the palate it has a smooth mouthfeel, firm texture and a mellow acidity and offers an elegant sweetness, with a savoury backbone. Hints of vanilla, grapefruit, melon and cooked rice add to the complexity and enjoyment of this well structured sake. Its structured acidity, clean finish, and light, lingering flavour of vanilla makes you want another sip. This sake is great on its own or paired with a variety of dishes.
Pairing recommendations include roast chicken, pork or beef, shellfish dishes ~ particularly lobster and crab, BBQ prawn or seafood skewers, marinated chicken or tofu dishes, seafood hotpot, risotto, and washed rind soft cheeses.

For a fun pairing, try this sake with a pumpkin, caramelised onion and gorgonzola pizza. This sake is complex and robust with notes of vanilla, fruit, nuts, and strong acidity. A small wine glass or tasting glass provides a good balance between concentrating the complex aromas and savouring the rich, robust flavour.
Shikisakura Tochigi no Hoshi Junmai

The Shikisakura Tochigi no Hoshi Junmai is a robust, rich, and moderately dry sake, displaying a prominent aroma of steamed rice, with subtle earthy, herbal and nutty notes. Medium-bodied on the palate, with lovely fine notes of caramel, balanced acidity and a strong umami backbone, with a clean, rounded finish. This highly versatile sake can be enjoyed across a wide range of temperatures, with its flavour profile changing and the umami enhancing further as it warms.
Pairing recommendations include seared Aussie beef, grilled pork, roast chicken, mushroom risotto and aged or hard cheeses. For something fun - try it with a bacon cheeseburger! A good approach is to start with a versatile white wine glass for most premium sakes to appreciate the aroma and taste.

For this sake, we also find that a medium sized ceramic guinomi (sake cup) works well and allows the rich, earthy flavours to be appreciated.
